you skim the oil? most ‘authentic’ places won’t skim it. it looks and tastes better w/o the skimming. i know its super unhealthy, but that’s how we indians do.

Is the curry flavor in this dish more like Thai curry or Japanese curry? It looks delicious but no matter how many times I’ve tried to eat curry based dishes I just don’t enjoy the flavor. So far Thai curry is the only one I enjoy (it probably has to do with the sweetness of the coconut milk).
